Your first bottle of whiskey is usually someone else’s recommendation. Your second is the first one you pick yourself, and that is where the label starts to matter — because most of what is printed on it is not marketing. In the United States, a good deal of it is a legal declaration, and the words are defined in federal regulation rather than by the brand.

Knowing which words are load-bearing and which are decoration is most of the skill.

The class name is a floor, not a recipe

“Bourbon” is not a region or a style. It is a standard of identity, and it sets minimums. To be labelled bourbon whisky, a spirit must be produced at no more than 160 proof from a fermented mash of at least 51 percent corn, and stored at no more than 125 proof in charred new oak containers.

The same pattern names the rest of the family. Rye whisky, wheat whisky, malt whisky and rye malt whisky each require at least 51 percent of their namesake grain — rye, wheat, malted barley and malted rye respectively — under the same proof and barrel rules.

Two things follow from that, and they are the useful part.

First, the class name tells you the floor, not the recipe. A bourbon is at least 51 percent corn. It might be 51 percent, it might be 78 percent, and the remainder might be rye, or wheat, or malted barley, in any proportion. Two bottles both honestly labelled bourbon can taste very little like each other. If you liked one and want another like it, the word “bourbon” is not enough information — the specific mash bill is, and brands that are proud of theirs tend to publish it.

Second, “charred new oak” is doing more work than it looks. New means new: a barrel used for bourbon cannot be used for bourbon again. That single requirement is why American whiskey tends toward vanilla, caramel and baking-spice character, and it is a rule most of the rest of the whisky world does not share.

Proof is a number about strength, and a decision by the bottler

Proof in the US is simply twice the alcohol by volume. 100 proof is 50 percent ABV.

Whisky must be bottled at no less than 40 percent alcohol by volume — 80 proof. That is the legal floor, and a great many bottles sit exactly on it.

The number above 80 is a choice. Whiskey leaves the barrel considerably stronger than it arrives in the bottle, and most producers cut it with water to a target proof. A higher proof usually means less water, which usually means more concentrated flavour — and a spirit you may want to add a little water to yourself, on your own terms rather than the bottler’s.

Proof is not a quality score. It is a dial, and where a bottle sits on it tells you something about intent.

An age statement is about the youngest whiskey in the bottle

This is the rule that surprises people.

When a label carries an age statement, the number refers to the youngest whiskey in the blend, not the average and not the oldest. A bottle marked “6 years old” may well contain some considerably older whiskey. It may contain nothing older than six years. The label is a floor again.

The requirement to state an age at all is tied to a four-year threshold. Any whisky aged less than four years must carry an age statement — as must a blend containing any whisky aged less than four years. At four years and older, the statement becomes optional, unless the label makes some other claim about age or maturity.

So the absence of an age statement is not nothing. It is a signal that the whiskey is at least four years old, and that the producer chose not to say more. Whether that is confidence or convenience is not something the label will resolve for you.

“Straight” is a small word that carries real weight

To be called straight, a whiskey must have been stored for a minimum of two years.

That is a lower bar than most people assume, and it is worth pairing with the rule above. “Straight bourbon” with no age statement means at least four years, because otherwise the age would have to be printed. “Straight bourbon” with “2 years old” on it is telling you exactly what it is, and telling you honestly.

Who made it, and where

Labels for the standard American whisky types must state where the spirit was distilled. That matters more than it used to, because the name on the front of a bottle and the distillery that filled the barrel are frequently not the same company.

The related term to know is bottled in bond. It is a narrow, strict designation: the spirits must be of the same kind, from the same class of materials, distilled in the same distilling season by the same distiller at the same distillery, and bottled at 100 proof — 50 percent ABV. The label must also carry the real name of the distillery, or the trade name it produced and warehoused the spirit under.

It is one of the few phrases on a whiskey label that a producer cannot use loosely. It deserves a post of its own, and will get one.

What the label will not tell you

Worth knowing what you are not being told:

The exact mash bill. The class name guarantees a minimum for one grain. Everything else about the recipe is voluntary disclosure.
Whether the age statement’s floor is close to its average. “Six years” covers a bottle that is all six-year-old whiskey and one that is mostly much older.
How the barrels were treated, where in the warehouse they sat, or how many went into the batch — all of which change the whiskey and none of which are required on the label.

None of that makes a label dishonest. It makes it a minimum standard rather than a full disclosure, which is exactly what it was designed to be. Read it as a set of guarantees about what cannot be true, and you will pick better second bottles.
